Cranberry and Spice Shrub

We love shrubs for both cocktails and mocktails. They have a rich history, one that began as an ingredient in "medicinal cordials."  We believe they may be the secret ingredient of every magical cock/mocktail.


2 cups Cranberries

1 heaping TBS Hippocras Mulling Spices. Available here: Hippocras, Mulling Spice – Pentacle Herbs 

1 cup Apple Cider Vinegar

1/2 cup Sugar or Honey 

1/2 cup Water


With a mortar & pestle (even rolling pin or mallet), break apart the spices to release more of their essence.

Combine all ingredients in a non-reactive pan and stir to combine.  Heat over medium heat, covered, until cranberries start to pop open and sugar is dissolved for approximately 10 minutes, stirring occasionally. 

Remove from heat and allow to cool.  Pour the mixture into an airtight container and refrigerate for 12-24 hours.

Strain well through mesh and/or cheese cloth doubled. 

Store in airtight container in refrigerator for a month. 

*Note: shrubs were often created to preserve fruit much longer and there are great recipes and techniques to explore.
