
Blood Orange Shrub "George"
This is our first shrub made with xylitol, a natural sweetener with a low glycemic index. With over 10% of the population having diabetes and numerous more being pre-diabetic, we wanted to create a delicious shrub to flavor water other drinks that wasn't made with sugar or honey.
It's tangy, bright and delicious!
Ingredients:
3 Cups wedged blood oranges (dry measure)
1 Cup Xylitol
1 Cup Apple Cider Vinegar
1/2 Cup Water
1 heaping TBS Hippocras Mulling Spices, available here: Products – Pentacle Herbs or substitute with a similar blend of spices. Hippocras spices include: Vietnamese Cinnamon, Clove, Star Anise, Orange Peel and Allspice
Instructions:
Muddle spice with a little of the sugar.
Pour spices and rest of sugar over blood oranges in bowl. Allow to sit at room temperature for 1/2 hour.
Put in non-reactive sauce pan with rest of ingredients (vinegar and water) and cook over low/med heat for 1/2 hour.
Cool completely.
Place the contents of the pan in an airtight container (we use 1/2G mason jar) and refrigerate mixture for 36 hours.
Strain twice and store in clean/sterile bottle(s) in the refrigerator.
Add to water, sparkling water for flavor and interest.
